I know this is not a vegetarian recipe. There are those in my family who must have meat from time to time. If you eat meat, a recipe like this one is a good way to make a little meat stretch quite a way. And it has collard greens in it, and they are those dark leafies that all the nutritionists say you should eat.

    Hey there! The vegan thing is going okay. I am still not 100%, but after reading “The Real Forbidden Fruit” it did slap me back into reality. I have not eaten meat since.

    We gave up milk about two years ago. Cheese and yogurt are about the only dairy products that do make it into our house. My son, 14, is a cheese freak! On his request we did eliminate all dairy for two weeks as an experiment a few years ago. WHAT AN EYE OPENER! I had no idea how much we consumed.

    The same son and I gave up all fast food several years ago. I had recently back-slidden. Thanks again to the above mentioned book, I am back off of that garbage as well. Why do they have to make eating terrible so darned easy?!

    BTW - I just LOVE your recipe card gadget. How did you do that? In the future, I plan to start a food blog with a friend, and I would love to know how to do something like that.

    The recipe card widget is made at keyingredient.com. Then you just click the blog button over there and it gives you the widget code to embed in your blog. But I save the old recipe when there is one in comments in case keyingredient ever breaks.
