Thanks to my friends Chrystal and Amir at Duo Dishes for this recipe. As you can see mine didn’t look anything like theirs. Chrystal says they didn’t really soak the tofu in the marinade but I totally did so maybe that was the difference. We tossed the extra marinade on the salad.

<!– Don’t think for a minute that this will taste like cheese, or you will be disappointed. However, it’s good in its own right. It has a nice creamy texture from the cashews. I might tweak this recipe the next time, adding real garlic and more lemon juice and less salt.

Creamy Mushroom Sauce

We have adapted this recipe from Christina Pirello’s macrobiotic cookbook. Don’t let the macrobiotic designation deter you–she has hundreds of recipes in there, and a large number of them are delicious and not weird at all.
